this apple hazelnut galette is a real crowd pleaser

the not so secret ingredient? a touch of orange blossom water

hey hi hello!

Welcome back to bake chats and boy do I have something really special for ya today!

The inspo for this one came from a perfume cake, actually. A while back I made a cake modeled after Kayali’s Oudgasm, and three of the key notes are pear, hazelnut and rose. That flavor combo really stuck with me so I held onto it with the idea of turning it into a pie or galette of sorts. But, as the creative + developing process goes things shift and change. So what started out as a pear galette with hazelnut rose frangipane began to morph into this bad boy. Mostly, well because okay I love a pear. The thing with pears though, is you gotta move quick omg. I would buy pears and forget about them for two days and they’re overripe and so so soft. With the galette’s I like the fruit to be firm before being processed since they soften as they bake. So, the pears eventually became apples.

Once the swap for apples happened, it was really hard for me to not pair tart granny smiths with warm cinnamon- they’re so meant to be. (Also, not hard because you know just don’t add cinnamon) Then the rose didn’t work as well, so that turned to orange blossom water. Which in the end gives this a baklava flavor vibe with the nutty frang, the cinnamon apples and the orange blossom water.

She is large format, sheet pan pie-esque and perfect for a crowd… you know like idk a friendsgiving table?
