I’m finally sharing one of the most popular if not the most popular cakes from my menu back when I was running an at home cake business, a cake that so many of you previously loved :) Passion fruit vines are starting to POP off in the neighborhood so, I’ve been going pretty much door to door asking people for the fruit off the vines in exchange for slices of cake. But, if fresh passion fruit doesn’t grow in your area, you still have options! I really enjoy, the frozen passion fruit pieces from Pitaya Foods, which is carries in tons of places- Sprouts, Whole Foods, Walmart, Gelson’s etc. If you’re very serious about getting your hands on fresh passion fruit you can also order 5lb and 7lb cases from Rincon Tropics- which are by far some of the juiciest passion fruits I’ve ever encountered!
When I was still in LA and making this cake regularly, I was also using a touch of Tehachapi Sonora, which gives the cake a creamy almost corn like flavor. It’s optional and you can just replace it with equal weight of all purpose flour. You unfortunately can’t get Sonora from Tehachapi online or in stores, but, I also highly recommend Barton Springs Mill for all your sonora and whole wheat needs!
