it's never to early to start the holiday freezer stash of cookie dough
I can already hear the people with no taste complaining about the mint chocolate combo. I DO NOT WANNA HEAR IT. The dough uses Andes mint pieces which is where we get the minty flavor from, so if you don’t like it… use something else. EZ PZ. Double down with a mix of dark and milk chocolate chips. Butterscotch or peanut butter chips. Use toasted nuts. White chocolate chips if that’s yo thang. I’m not gonna break into your house and beat you up if you use what you like in this recipe (or any recipe).

Now, on to what really matters. Holiday cookie prep. No more waiting till the last minute to make your cookie doughs!! If you have time now, make your doughs now and freeze them. I actually prefer the texture of a cookie baked from frozen, if you’ve read any of my pervious cookie recipes you’ll know that. I hate to break it to ya, but most bakeries are prepping their doughs at the start of the week and baking from frozen (or at least from the fridge) as needed. That’s why they’re always SO good.
You can freeze most cookie doughs. Make the dough, portion in to desired size dough balls, place on a parchment lined baking sheet, wrap with plastic and freeze until needed. You can also portion the dough, freeze just until set, then transfer to an air tight bag/container for freezing. Same goes for sugar cookie or ginger bread cut outs. My recipes are timed out to be baked from frozen but if you’re using another recipe you’ll want to add a few more minutes to the bake time.
So if you’re someone who bakes 12+ types of cookies during the holidays (not me, I make two at most for my sanity). Do yourself a favor and start prepping now. It’ll save you stress in the future. Plus, you’ll avoid unnecessary last minute trips to the grocery store during peak holiday madness. Doughs can be stored up to 3 months in the freezer. So, you can keep the stash long after the holidays are over for when you need an emergency cookie after a long day.
Also, buy your ingredients in bulk when you can!! I always buy my sugar and flour in bulk and my hottest tip is that a 25# bag of king arthur AP flour is $23 at smart and final extra! Which is a mf STEAL. You can split the bag with a friend or coworker too, if your baking endeavors don’t call for the full 25 pounds lol.
