hey hi hellloo!

Me again xx Welcome back to bake chats!!

I asked, you answered and said it’s too early to start sharing V-day recipes, that I should wait until the 16th!!! minimum before posting and guess what??? For once in my life I’m ahead of schedule on holiday recipes so I’m sharing them now!!! But, also by the time you’re reading this, we’re already 6 days into a new year!! Which basically makes it the appropriate time. Also, just because this is pink, red and flavored with rose doesn’t mean it has to be tied to Valentine’s, you can make this right now!! If you’re not still cookied out from the holidays.


At the end of last year I shared a recipe for red berry rose water jam, which I mentioned would be put to use in the new year. This is me delivering on that promise.

The beauty of baking is that you have free will and you can do whatever you want. I know… I know “bUt It’S a Sc!3nC3” yeah, but you don’t have to touch any of the science that makes a recipe work to have fun with it. By understanding that most everything you want to make is comprised of different components that can be infinitely flavored, swapped and paired together, you unlock a whole other realm of creativity.

These linzers, for example are made up of a rose water scented linzer cookie and the red berry rose water jam. But, these two components operate separately from each other. Recipes are starting points, not finish lines. Sure, I developed this to my liking but if you don’t like rose flavored cookies, don’t use a rose water jam. If you don’t like raspberries, use a strawberry jam instead, or whatever jam you’re currently loving. Alternatively, if you have a cake that has a jam component, feel free to take this jam and plug it in there and anywhere else you’d like. Donuts, eclairs, cream puffs, etc etc. You can use it anywhere you’d normally put a jam!! And if ya want to use a shortbread cookie that doesn’t have almond flour in it like the base of these do, then you can just take this jam and use it with a nut free cookie. You don’t have to ask for a nut free version of this recipe, when so many nut free shortbread cookies already exist.


And while we’re here, there is beauty in having a vague idea, because it truly has the ability to go anywhere. If I didn’t tell you what I did to make these cookies but just gave you the idea of “raspberry rose linzer” , your mind is free to fill in the blanks. When I say raspberry rose linzer, what do you think of? Where are you putting each flavor? Is it classic linzer cookies with raspberry rose jam? or maybe raspberry jam and a rose water glaze? Or maybe rose water cookies with a raspberry jam? It can be whatever your ideal version of what you think a raspberry rose linzer should be.
