I so appreciate your flavor exploration - rose water syrup, pistachio frangipane and blackberry jam sounds insanely delicious ~ I've been wanting to make croissants for awhile now but haven't landed on a recipe that feels like a good starting point, are there any base recipes you'd recommend or ways to approach discovery in this case?

I highly reccomend Benny Baker on YT- his recipes for croissants are def beginner friendly IMO and he gives tons of tips and tricks to help you along. He has a few recipes among his videos so I think watch a few and pick which seems most manageable for you! https://www.youtube.com/watch?v=2NC0W5Xtvoc&t=975s

i loveee it when you inspire us with new flavour / ratio profiles but let us do some of the thinking too! do you have a recipe for croissants you could share for home bakers - maybe a lazy version?

lolol dont worry I left plenty of ideas for you to come up with on your own ♡ as far as a croissant recipe- I dont personally have home baker friendly one, since all my work with croissants has been for commercial kitchens I never really bother to develop a home kitchen friendly version.. BUT I do highly reccomend Benny Baker on yt!! https://www.youtube.com/watch?v=2NC0W5Xtvoc&t=975s very informative and has a few home baker friendly recipes. and gives soooo many tips and tricks to help you on your journey!

I love your writing. It's clear you have a true passion for pastry. Do you ever add fillings to your croissants - like strawberry jam or hazelnut spread? I think it would taste great, especially when you're feeling bored with flavors. I hope I get to read more about your adventures at the bakery soon.
